  • Overview

    The Head Cook is responsible for all meal preparations for 200+ people. Supervises 5 galley staff members, including Second Cook.

    Responsibilities

    • Prepares and serves meals (4 per day)
    • Maintains inventories and orders food and supplies.
    • Ensures that sanitary conditions are in full compliance with all Federal and State regulations.
    • Manages menu to ensure good food cost and minimal waste.
    • Train and supervise galley staff.
    • Other duties as assigned.

    Qualifications

    • Excellent communication skills required.
    • Minimum of 2 years’ experience in quantity food preparation required.
    • Current food service certification or ability to obtain required.
    • Food Service Manager Certification or ability to obtain preferred.
    • Energetic and able to work 12 or more hours per day, 7 days per week.
    • Baking experience desired.
    • Must be physically and mentally able to work and live in confined situations.
    • Prompt attendance is an essential function of the job.
    • Required to don an immersion survival suit and be physically able to board life raft or cross to another vessel without assistance in the event of an emergency.
    • Able to perform the essential functions of the job with or without reasonable accommodation.

    Working Conditions

    Must be able to work 7 days a week, 16 hours a day in wet, cold conditions. There are areas within the plant that contain moving and loud machinery, and hearing protection and other safety and protective equipment is required.
